Tufaie Soave Classico DOC 1998 - Bolla

The grapes for this wine are grown in the heart of the classic Soave region. Castellaro is the name of the steep hill of volcanic origin whose splendid sunny position and ideal microclimate produce superb quality grapes. The grapes undergo cryo-maceration, a process in which the must and skins remain in contact for approximately 16 hours at a low temperature. Cryo-maceration favors greater extraction of aromas and improves the structure of the wine, which is more stable and has a longer shelf life than a traditional white wine. It should be drunk within two years of the vintage date. Garganega is the main type of grape used, with a good percentage of Trebbiano di Soave, which gives it more aroma.

Area of origin: The hillside vineyards of Soave.

Grapes: Mainly Garganega with Trebbiano di Soave.

Soil type: Dry, volcanic.

Alcoholic content: 12,5 %Vol.

Production technique: Grapes are cryo-macerated and fermentation takes place at controlled temperature.

Colour: Bright golden yellow.

Bouquet: Distinctive, spicy with hints of liquorice candy and ripe fruit.

Flavour: Full with persistent taste and aroma.Complex with an intense finish.

Residual sugar: 1 gr/l.

Total acidity: 5,7 gr/l.

Shelf life: Correctly stored it is best drunk within 2 years of production.

Temperatura di servizio: 12°C (53°F).

Food accompaniment: Light hors-d'oeuvre, appetizers, soups and all fish dishes.
