Area of origin: The hilly Soave Classico region. Grape variety: Mainly Garganega with Trebbiano di Soave. Soil type: Dry, volcanic. Alcoholic content: 12 %Vol. Production technique: Grapes are selected while still on the vineand are allowed to dry on mats until the middle of February before being gently crushed. Yealds are low, around 40%. Slow fermentation takes place in oak barriques for a period of 4 months. Then the wine spends another 2 months in barriques and 3 months in bottle before being released. Colour: Golden yellow. Bouquet: Intense, flowery, recalling acacia-flower honey, with a spicy undertone from the fermentation in oak. Flavour: Round, full, persistent, almost honey-like. Residual sugar: 95 gr/l. Total acidity: 6 gr/l. Shelf life: Stored correctly, is at its best within 3/4 years of production. Serving temperature: May be served chilled, like a white wine, or at room temperature, according to the occasion. Food accompaniment: Hors d'oeuvre, terrines, pates,white meat and cheese (best with gorgonzola cheese, blue cheese or stilton). Francesco Bolla |
